Hi friends! I’ve been planning our back-to-school menu, and while I was looking through my recipe file, it occurred to me that we bake a lot of muffins, especially banana muffins! But, the kids love these tasty morsels, and they’re easy to make ahead of time, which means they’re ideal for those busy mornings when you need to grab a quick bite and go. So today, I’m sharing 6 Easy Banana Muffin Recipes that make perfect back-to-school breakfasts or snacks.

Banana Applesauce Muffins — The kiddos love both applesauce and bananas, and together, they make a terrific combo. Plus, substituting applesauce for oil or butter, makes these muffins lighter than your regular recipe. For added convenience, I just use one of those little plastic applesauce cups!

Banana Cranberry Muffins — Dried cranberries give these banana muffins a little extra kick, and even though you can enjoy them anytime, they would taste especially good on a crisp fall morning! This recipe uses coconut oil, but you could also use vegetable oil or butter.

Peanut Butter Banana Chip Muffins — Peanut butter adds some extra protein to these little gems, and there’s even chocolate too!

Easy Two Ingredient Banana Muffins — If you want to get technical, these muffins actually have 3 ingredients, but still, they’re super easy to make, so you could whip up a batch before school in no time. Plus, they taste amazing!

Chocolate Chip Banana Bread Muffins — This is basically a banana bread recipe, only in the shape of muffins. Plus, there’s chocolate too!

Zucchini Banana Muffins with Chocolate Chips — Even my picky zucchini hater loves these muffins. They’re super moist and bursting with semi sweet chocolate, so you could even serve them for dessert. They’re also perfect for using up any extra zucchini you might have.

I like to bake muffins on the weekends or before the kids come home from school. They love coming home and finding freshly baked goodies waiting for them. 

We never have a lot of extras, but you could easily freeze the muffins if you need to. Just wrap them up well with plastic wrap and foil, and warm them up when you’re ready to use them.
