This week’s dinners are for the first week in January — Happy New Year! Did you make any New Year’s resolutions to eat healtheir and take off a pound or two, or maybe more? If so, we’ve got you covered!
You’ll find two soup recipes, an easy low-carb sheet pan dinner, a tasty frittata and a recipe for heart-healthy salmon. I always include healthy, lighter dinners for the first few weeks in January. After all of the holiday goodies we had around the house, we need to get back on track. I know I’m definitely hoping to shed a few pounds, so even though we still love our comfort food, it’s all about balance, right?

Healthy Lentil Soup from Art from my Table — I could eat soup every day, and lentil soup is one of my favorites!
Ham and Cheese Frittata from Suburban Simplicity – This would be perfect for weekend brunch, as well as an easy weeknight dinner.
One Sheet Pan Dill Chicken Dinner from Meatloaf and Melodrama — This takes just 30 minutes to make, and clean-up is easy, too!
Pizza Soup from Vintage Kitty — My kids love pizza, so I can’t wait to try this soup!
Baked Salmon Fillets from The Cook’s Pyjamas — Don’t you just love that crust?
