As a mom of five, I’m always searching for ways to save time and money, especially when it comes to food. The kids all have different schedules, so getting dinner on the table can be challenging. I usually make enough for leftovers on the weekend and try to cook at least one quick and easy meal during the week.
I have a few go-to recipes that I can fall back on whenever I’m pressed for time, and this Kielbasa with Apples, Potatoes and Peppers dish is one of them. The kids love the combination of potatoes and apples, and Hillshire Farm kielbasa is an easy way to add protein to the meal.
One reason I like this program is that I can choose the coupons I want and load them onto my Club Card. If I happen to forget something, I can have my husband pick up whatever we need on his way home from work. My husband may be one of the few remaining dads on the planet without a smart phone, but this way, we can still get the discount. The recipe itself is super easy and only requires a few ingredients:
Ingredients for Kielbasa with Apples, Potatoes and Peppers
- 1 package of Hillshire Farm kielbasa, sliced thin
- 4 large potatoes, washed and diced
- 2 Granny Smith apples, washed and diced
- 1 bell pepper, cut into chunks
- 1 cup apple juice
- 2 cloves garlic, diced
- 1/2 onion, chopped
- 1 teaspoon ground cinnamon
- Salt and pepper, to taste
Add some olive oil to a large skillet, and cook the potatoes until slightly tender.
Add the onions and garlic, and season with salt and pepper
Add the pepper and apples, and cook until slightly soft
Add the kielbasa, apple juice and cinnamon, and heat until cooked through.
When the dish is ready, I like to add some grated Parmesan cheese to the top for some extra flavor. This dish is so versatile, and you can also add whatever seasonings your family likes. To save even more time, you could even use frozen potatoes. I usually keep a bag of frozen onions on hand so that they’re ready when I need them, and this eliminates another step!
