Chocolate Covered Strawberries Recipe (easy microwave method)

I have been making chocolate-dipped strawberries in the microwave forever. It’s the easiest way to melt chocolate without a double boiler, and it’s foolproof! No standing over the stove, no muss, no fuss!

Of course, plump juicy strawberries are delicious on their own or in a fresh salad. But when a strawberry is dipped into melted chocolate, it gets elevated to a higher plane.

Ingredients

You only need 3 simple ingredients for this easy dessert. They should be easy to find in your local grocery store. Full amounts are in the printable recipe card below.

  • Fresh strawberries — Look for ripe strawberries that are firm and in perfect condition — avoid mushy or overly soft berries.
  • Semi-sweet chocolate chips — look for good quality chocolate chips for best results. I like Guittard or Ghirhardellli
  • Coconut oil — helps chocolate melt smoothly, dry faster and adds a beautiful glossy finish. It’s like a homemade chocolate shell and does not affect the taste.

How to Make Chocolate Covered Strawberries

First, rinse the strawberries under cold running water. Be sure to wash the leaves, as well — don’t cut them off, as you will need them for dipping.

Then, dry strawberries with a dry paper towel or clean kitchen towel. Let them air dry completely on a dry paper towel in a single layer while you melt the chocolate.

Next, place the chocolate chips into a medium microwave-safe bowl. You need about 2 cups chocolate morsels or a whole 12-oz bag.

Then, place 1 teaspoon coconut oil on top of the chocolate chips. Place the bowl into the microwave, and cook on full power for 30 seconds.

Stir chocolate, and cook in 30-second increments stirring after each increment until chocolate is melted.

Dip each strawberry into the melted chocolate, leaving just the very top uncovered.

Allow the excess chocolate to drip back into the bowl. You can rotate or shake the berries very gently to get extra chocolate off.

Then, place the chocolate coated strawberries on a baking sheet lined with wax paper or parchment paper lined to dry.

How to Decorate Chocolate Covered Strawberries

The easiest way to decorate chocolate covered strawberries is to add your favorite sprinkles before the the chocolate dries. Add chocolate jimmies or seasonal sprinkles for fall, Christmas, Easter or summer.

If you want to get fancy, use a chocolate drizzle. Drizzle melted white chocolate chips, melted milk chocolate or melted candy coating over the chocolate strawberries. You can dip strawberries into mini chocolate chips or crushed cookies or graham crackers for added flavor.

Recipe Variations

If you don’t have coconut oil, you can substitute vegetable oil, shortening or butter.

Dip the strawberries in dark chocolate chips or milk chocolate instead of semi sweet. Use a melting chocolate like Baker’s chocolate or Scharffen Berger instead of chocolate morsels.

Valentines Day – You can dip the strawberries in melted white chocolate or almond bark and decorate with holiday sprinkles. Or make pink strawberries or any color using chocolate coating. If you do use chocolate coating, you won’t need the coconut oil.

How to Store Chocolate Dipped Strawberries

The best way to store chocolate covered strawberries is in a cool dry place at room temperature if you are using them the same day. For best quality, make the strawberries the same day you plan to serve them.

If your house is warm, store the strawberries on a wax paper lined baking sheet or plate in the refrigerator. They stay fresh for up to 2 days, although they may sweat a little in the fridge.

Use the best quality chocolate you can buy. Don’t skip the coconut oil – it really makes a difference!

Be sure strawberries are completely dry before dipping in melted chocolate.

Instructions 

  • Wash strawberries under cold running water
  • Pat dry completely using paper towels, and place on wax paper lined baking sheet
  • Place chocolate chips in microwave-safe bowl, and add coconut oil
  • Microwave on full power in 30 second increments, stirring gently after each 30 second increment, about 2 minutes total
  • Hold strawberries by stem or leaves, and dip into melted chocolate
  • Shake or rotate berries gently to remove excess chocolate, and place on wax paper-lined baking sheet to dry

Notes

Make sure to dry berries very well before dipping or the chocolate may not stick.
It’s best to consume chocolate covered strawberries the same day you make them for best quality. Store in a cool, dry place. 
They will stay fresh for up to 2 days in the refrigerator.
