So, my daughter asked for chocolate chip pancakes for breakfast last weekend, which was totally fine with me.

But, instead of just adding chocolate chips to our favorite pancake recipe, we decided to make them taste more like our favorite cookies.

You guys, we definitely got it right! These are the best chocolate chip pancakes with a mix of brown sugar and white sugar and a touch of cinnamon — just like our favorite chocolate chip cookies! My whole family loves them!

One Bowl Pancakes

There’s no need to dirty a lot of dishes when you make pancakes for breakfast. The best part about this recipe is you can easily make pancakes in 1 bowl — no mixing dry ingredients and wet ingredients.

We use the one-bowl method for our favorite pancake recipes, including Banana Cinnamon Pancakes, Chocolate Orange Pancakes, Eggnog Pancakes and Pumpkin Pancakes.

You only need simple pantry staples for this fluffy chocolate chip pancakes recipe. They should be easy to find in your local grocery store.

  • Flour — all purpose flour is the base of the recipe
  • Egg — 1 large egg
  • Butter — salted butter or unsalted butter instead of oil
  • Baking powder — helps make super fluffy homemade pancakes
  • Salt — kosher salt or sea salt
  • Cinnamon — adds extra flavor to this classic pancake recipe
  • Sugar — for sweetness
  • Brown sugar — for that classic chocolate chip cookie flavor
  • Vanilla extract
  • Semi sweet chocolate chips — or mini chocolate chips. Milk chocolate chips may melt

How to Make Chocolate Chip Pancakes in One Bowl

Just add an egg to a medium bowl (mixing bowl), and beat it slightly. Then, add your dry ingredients, and stir slightly.

So, in this picture you can all of the ingredients. But normally, the egg is on the bottom.

Next, add melted butter, vanilla and milk, and whisk together until blended. There may be a few lumps, but they’ll disappear when you cook them.

Sprinkle in some semi sweet chocolate morsels. And stir.

Now, you’re ready to make pancakes on the griddle! Use a scant quarter cup batter to pour batter onto the hot griddle or hot skillet.

When the edges appear firm and the bubbles start to pop, flip the pancakes and cook for another minute or two on the second side.

Favorite Pancake Toppings Ideas

These pancakes are amazing on their own and even better with some fun pancake toppings!

We usually make a pancake topping bar and let everyone go to town. The kids love to add butter, maple syrup, chocolate sauce or honey on top of the pancakes.

And, whipped cream and a few more extra chocolate chips take these babies to the next level. Yum.

You can also add sprinkles, crushed chocolate chip cookies and fresh fruit. Bananas, fresh strawberries and blueberries are all good ideas!

How to Store and Reheat Leftover Pancakes

Place leftover pancakes in an airtight container in your refrigerator and they will keep for up to 4 days. You can freeze pancakes in a freezer bag for up to 3 months for best taste.

Reheat pancakes on the stove top or in your microwave. I love to make a large batch on the weekends and reheat them for breakfast on busy mornings!

Tips for Perfect Pancakes

Add a little more milk if the batter seems too thick.

Cook on medium high heat. Don’t heat the griddle too hot or the chocolate chips may melt.

Use a non-stick griddle or non-stick skillet for best results. You can add more butter as needed during the cooking process.

The brown sugar makes these pancakes a little darker than most pancake recipes, so don’t worry if they seem darker than the usual golden brown color.

Keep cooked pancakes warm on a baking sheet or cookie sheet covered lightly with aluminum foil in the oven while you finish cooking all of the pancakes.

Ingredients  

  • 1 egg
  • 1 ¼ cups all purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoons brown sugar
  • 1 teaspoon white sugar
  • 1 tablespoon ground cinnamon
  • ½ teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter
  • 1 cup milk
  • 1 cup semi sweet chocolate chips

Instructions 

  • Add an egg to a medium mixing bowl, and beat slightly
  • Add flour, baking powder, brown sugar, white sugar, cinnamon and salt, and stir dry ingredients slightly
  • Add vanilla, melted butter and milk, and stir until well combined. Batter may have a few lumps, but don't over mix. Stir in chocolate morsels
  • Lightly grease a griddle with butter, and heat until hot on medium to medium-high heat. Drop small circles (We use a 1/4 cup to measure out batter) of batter onto griddle. Leave room to flip them
  • Cook until bubbles form and start to stay open and edges are slightly firm, then flip and cook for about 1 minute more on other side
  • Serve as you make them or keep warm in oven until ready to serve

Notes

Recipe makes about 21 medium pancakes or about 10 large ones.
Cook on medium to medium-high heat so the chocolate chips don’t burn. Due to the brown sugar, these pancakes will be darker than most.
