Crockpot Chicken and Stuffing is an easy slow cooker chicken recipe made with simple ingredients. An easy recipe and delicious dinner the whole family loves!

This easy Crock Pot chicken and stuffing recipe is perfect comfort food. It’s incredibly easy and budget friendly. Just layer the ingredients in your slow cooker, and cook!

Chicken stuffing bake is a classic my family love during sweater weather. But, this slow cooker recipe makes a delicious family dinner any time. It’s also a great recipe for a simple holiday dinner or small Thanksgiving dinner!

Ingredients

You only need a handful of ingredients for this simple recipe. You can also add extra flavors and customize the basic recipe to suit your own tastes! Here’s a quick overview of the ingredients.

  • Chicken breasts — boneless skinless chicken breasts
  • Seasonings — ground black pepper, garlic powder and dried onions
  • Sour cream
  • Stuffing Mix — I use Stove Top Stuffing mix – dry stuffing mix (chicken flavor)
  • Cream of chicken soup — or cream of celery soup
  • Chicken broth — or water
  • Butter

How to Make Slow Cooker Chicken Stuffing Casserole

Step 1. Add a little oil or use a non stick spray to coat your Crock-Pot. Then, place the chicken breasts in the bottom of the slow cooker, add chicken broth, and season chicken breasts.

I used a mixture of black pepper, garlic powder and dried onions. You can also use your favorite poultry seasoning blend here.

Add salt, to taste, if you like. The first time I made this easy slow cooker chicken, I added salt, but the next time, I left it out and let people salt their food if they wanted to.

Step 2. Spread the cream soup and sour cream evenly over the chicken. I used cream of celery this time, but you can use cream of chicken or cream of mushroom soup.

If you want to thin the soup out a little, you can add a little milk or more chicken broth. We like firmer stuffing, so I use the soup straight from the can.

Step 3. Next, sprinkle the dry stuffing mix on top of the chicken. Place pats of butter on top of stuffing.

You don’t need to add liquid to your stuffing mix since liquid from slow cooking will cook the dry breadcrumbs.

If you like soft stuffing, you can add a half cup of broth or water over the dry mix. with chicken broth. You can also use water if you want.

This time, I added chopped celery and dried cranberries since I use them whenever I make homemade stuffing for Thanksgiving.

Cook Time

Step 4. Cover, and cook on high for 3 to 4 hours or low for 6 to 8 hours.

The total cooking time will depend on how thick the chicken breasts are and the make and model of your slow cooker.

Pro Tip — For firmer stuffing, remove the lid for the last 30 minutes of cooking. This will help some of the moisture evaporate. Or, place a dry paper towel between the lid and the slow cooker to absorb some of the moisture.

I used 4 thin chicken breasts here, about 2 pounds. So, they were done in 3 hours.

For extra flavor, add a few pats of butter over the stuffing before serving. Yum!

What to Serve with Crockpot Chicken and Stuffing

You can’t go wrong with a side of green beans with this delicious slow cooker chicken. If you’re not adding green beans in the slow cooker or mixed veggies, you can microwave green beans or cauliflower or broccoli on the side.

Serve cranberry sauce or Instant Pot corn casserole and mashed potatoes to round out this delicious dinner.

How to Store

Refrigerate leftover chicken with stuffing in an airtight container. It will keep for up to 4 days. You can freeze leftovers for up to 3 months for best taste.

Reheat chicken with stuffing in your microwave if reheating an individual portion. You can also heat leftovers in your oven.

Variations

It’s very easy to customize this crockpot chicken and stuffing recipe.

To make slow cooker Thanksgiving chicken, add diced celery and dried cranberries — Craisins — to the stuffing. You can also use homemade stuffing instead of a mix.

Add fresh or frozen green beans on top of the chicken for a complete meal. I don’t recommend using canned green beans, as they will overcook.

You can substitute chicken thighs for the chicken breasts. For an extra creamy sauce, use 2 cans of cream of chicken soup or celery soup.

  • 1 tablespoon olive oil or cooking spray
  • 4 boneless skinless chicken breasts about 2 pounds
  • ½ cup low sodium chicken broth
  • 1 tablespoon dried minced onions
  • 1 teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • 1 10 ounce can cream of celery soup or cream of chicken soup
  • ½ cup sour cream
  • 1 package Stove Top Stuffing Mix 6 oz
  • 2 stalks celery diced, optional
  • ½ cup dried cranberries optional
  • 4 tablespoons butter

Instructions 

  • Add olive oil and chicken breasts to slow cooker, add chicken broth, and season with pepper, garlic powder and dried minced onions

  • Cover and cook for 3 to 4 hours on high or 6 to 7 hours on low. Chicken should be 165 degrees when cooked

If stuffing seems to dry or for wetter stuffing, add 1/2 cup of chicken broth over stuffing.
Total cook time depends on how thick chicken is and how fast your slow cooker cooks. Chicken is done at 165 degrees.
