Double Chocolate Meringue Cookies have a light, airy chocolate shell with a chewy chocolate surprise inside.  Decorate them with candy hearts and sprinkles for a delicious Valentine’s Day treat!

This is special post because I’m sharing one of my favorite cookie recipes and teaming up with some food blogger friends in support of a wonderful cause.

Right before Christmas, I shared my grandma’s recipe for meringue chocolate chip cookies, or Surprises, as she always called them. When you bite into the sweet meringue, you get a rich chocolate surprise!

Since Valentine’s Day is coming up, I thought it would fun to make chocolate meringue cookies, since I always associate chocolate with this particular holiday. Some people think of hearts,  flowers and jewelry, but I’m always about the chocolate!

I only added a tablespoon of cocoa powder, so this isn’t a super chocolaty cookie. It’s just enough that you get a little taste of chocolate from the meringue and a deeper chocolate when you bite into it. And of course, we just had to add some sprinkles!

These delicious double chocolate meringue cookies just melt in your mouth, and they have a tendency to disappear fast. I speak from experience!

Tips for Making Meringue Cookies

  • Bowl and beaters should be completely clean and dry and free of any oily residue
  • Carefully separate egg whites from yolks to ensure no yolks mix in with the whites
  • Add sugar and cocoa powder in small amounts, and beat well in between
  • Meringue should be very stiff and form small “peaks” before you fold in the chocolate chips
  • Humidity may affect the consistency of the meringue

Double Chocolate Meringue Cookies

Double chocolate meringue cookies are light and airy on the outside and filled with a semi sweet chocolate chip surprise inside. They're perfect for Valentine's Day or anytime you want a sweet chocolate treat!

Ingredients  

  • 3 egg whites
  • teaspoon cream of tartar
  • teaspoon sea salt
  • 1 cup granulated sugar
  • 1 tablespoon cocoa powder
  • 1 cup semi sweet chocolate chips

Instructions 

  • Preheat oven to 200 degrees
  • Add the egg whites, cream of tartar and sea salt to a large mixing bowl, and beat with hand mixer on high until foamy
  • Gradually beat in the sugar and cocoa powder, beating well in between
  • When egg whites are stiff enough to form stiff peaks and stay stiff, gently fold in the chocolate chips, using a spatula  
  • Use a tablespoon to scoop batter on baking sheets that have been lined with parchment paper or silicone baking sheets, and top with candy sprinkles, if desired
  • Bake for 45 minutes or until cookies are firm and lift off of baking sheets easily
  • Turn heat off, and allow to cool in oven
  • Store in tightly covered containers
