Hey Everyone,
We’ve made a couple of Christmas treats, but most of the baking will occur this week and early next week. Otherwise, certain young people will eat the goodies, and there will be nothing left for Christmas. Still, I love making treats, and I served this quick dessert a few times already. It doesn’t matter if it gets gobbled up because it’s so easy, and I can whip up another batch the next day.
I have this giant bag of peppermint marshmallows, and what goes better with peppermint than chocolate?! So, all I did was melt about a 6 ounces of semi-sweet chocolate chips in the microwave.
I took a few marshmallows out of the bag and put the bag away before the kids could eat most of it. See how nice and fluffy these are?!
Then, I dipped the marshmallows into the chocolate and covered them about halfway with the chocolate. This way, the chocolate doesn’t melt all over little fingers, and I like the contrast between the peppermint swirls and the chocolate coating. The kids helped with a few and got chocolate everywhere–but that’s normal, right? These were some of the better looking ones.
We also sprinkled some pink sugar crystals over the chocolate to give the marshmallows some sparkle. We put the treats into the refrigerator for a few minutes so the chocolate would set faster. We’re a very impatient bunch, especially when it comes to chocolate-covered marshmallows!
Sometimes it’s nice to create something simple, and these are very quick and easy to make–yummy too! These would also be nice addition to a hot cocoa bar.
