I love Fridays. Well, I love the weekends more, but I always love the feeling of making it through the week. It’s as if the entire universe breathes a collective sigh of relief—ahhhhhh. Anyway, I didn’t get much done today except necessary writing projects and the things related to being the MOM. After driving the crew to school and picking them up, I wasn’t in the mood to create an elaborate dinner, so we all sat down to this delicious (in my opinion) dish.
I fried some Italian sausage and added garlic, onions, diced tomatoes and cannellini beans. I also threw in some fresh basil at the end and served it over some thick, curly radiatori pasta.
The result was a simple and filling meal–the perfect way to begin the weekend! Thanks for reading!
