Hi Friends! I know that many of you are still in summer mode, but school starts for us desert dwellers in early August, and I’m already planning easy meals and snacks to get us through those hectic first weeks. So today, the kids and I did some experimenting, and we made a batch of No Bake Peanut Butter Energy Bites.
These tasty little morsels may be small, but they’re packed with protein and loaded with flavor. Plus, they have a touch of chocolate, because a little chocolate is always a good thing. And the best part is that you can whip a bunch of these peanut butter balls in a matter of minutes!
My kids love to snack, especially when they first come home from school. In fact, I’m lucky if they say hi first before they ask what they can have to eat! But really, I remember how long the school day can be, so you know, I really don’t blame them.
Still, I want them to have something healthy — and filling too. Since it’s so easy to reach for the chips or crackers, I want to make the kids a snack that’s not only healthy, but is also ready when they are. Of course, they have to taste good too.
And these little energy balls definitely fit the bill. You can make them earlier in the day and keep them chilled until the kiddos come home.
Just try not to eat too many of these easy no-bake snacks yourself!
Oh, and there’s no added sugar here — just the natural sweetness from chopped dates and a touch of honey. Oh, did I mention the chocolate chips?
Ingredients for No Bake Peanut Butter Energy Bites
- 2 cups oats
- 1 cup natural peanut butter
- 1 tablespoon ground cinnamon
- 2 teaspoons honey
- 8 dried, pitted dates, chopped — roughly 1/4 cup
- 1 cup semi sweet chocolate chips
These peanut butter balls are perfect for snacking at home or on the go. One of my daughters takes dance after school, and she needs to munch on something that will keep her energy up.
My little Diva moved up a level this year, so she’s at her second home for up to three hours on some days! Honestly, I don’t know how she does it. But since we’re usually rushing off to the studio not long after she comes home from school, a portable protein-packed snack like these energy bites is exactly what she needs.
Of course, the teens can definitely use some extra energy for those late-night assignments that are due the next day but were somehow forgotten until the last second. Remember those days? Oh yeah, I have to confess that I do!
