Make Pumpkin Chocolate Chip Cookies with spice cake mix and pumpkin puree! These cake mix cookies are soft, cakey and perfect for fall baking. Best of all, you only need 5 ingredients to make them!

I’m all about easy recipes. So, I took the easy way out today, and I whipped up a batch of cake mix cookies using a box of cake mix and half a can of pumpkin puree.

These easy cake mix pumpkin chocolate chip cookies are super simple. And, you save a lot of time since you don’t have to measure everything.  But, you still end up with a bunch of soft, warm and very delicious cookies.

As much as I love to make from scratch recipes, we could all use a short cut recipe now and then.

Some of my other favorite cake mix cookie recipes are easy peppermint mocha cookies, strawberry crinkle cookies and banana chocolate chip cookies.

Ingredients

You only need a few simple ingredients to make pumpkin spice chocolate chip cookies. If you don’t already have them in your refrigerator or pantry, they are easy to find in the grocery store or online:

  • Box spice cake mix — or yellow cake mix plus pumpkin pie spice
  • Canned pumpkin — not pumpkin pie filling
  • Pumpkin spice flavored creamer or milk
  • Egg
  • Semi sweet chocolate chips

How to Make Pumpkin Chocolate Chip Cookies with Spice Cake Mix

First, beat the egg in a large bowl. Then, add your pumpkin puree, milk and cake mix.

For these cookies, I used a spice cake mix. And actually, I made a couple of batches before they turned out the way I wanted them to.

The first time, I used a whole can of pumpkin purée, which was too much.

The taste was good, but the cookies were way too soft and cake-like. They were done, but it was almost like eating a pumpkin chocolate chip muffin that was shaped like a cookie.

There’s nothing wrong with that, but I just wanted the cookies to be firmer.

So the next time, I only used half a can of pumpkin puree, or about one cup of pumpkin. And this, my friends, is truly the right amount! 

I usually add a little bit of milk when I make cookies from cake mix, but we were out.

So, instead of using milk, I used pumpkin spice coffee creamer, instead!

Stir in the chocolate chips. Then, mix until fully combined.

Use a medium cookie scoop to scoop up the dough, and drop on prepared baking sheets. A tablespoon also works!

If you have any remaining chocolate chips, place them on top of the balls of dough as a topping.

You can line the baking sheets with parchment paper, aluminum foil or silicone baking mats.

Cooking Time

Bake these easy cake mix pumpkin chocolate chip cookies for 12 minutes at 350F or until the edges are firm and the centers are set.

The baking time may vary with individual ovens.

When they’re done, allow the pumpkin cookies to cool a bit. Then, transfer the cookies from the baking sheet onto a wire rack or cooling rack, and let them cool completely.

Variations

I like to keep this delicious recipe simple, but there are ways to customize your sweet treat!

Like I mentioned earlier, you can use either milk or pumpkin spice coffee creamer to mix into your dry ingredients.

Choose whatever kind of chocolate chips you like best– milk chocolate chips, semi-sweet chocolate chips, dark or white chocolate chips, it’s up to you!

If you want to make this a 3-ingredient pumpkin chocolate chip cookies recipe, just mix the cake mix, pumpkin and chocolate chips. The texture will be different, but it’s still a delicious cookie!

How to Store

It’s easy to store these pumpkin spice cookies– just keep them in an airtight container! They’re fine being kept at room temperature and stay soft for about 3 to 4 days.

To keep the cookies extra soft, we sometimes add a slice of white bread into the container with the cookies. The bread will absorb the moisture so the cookies stay soft!

You can wrap the cookies in plastic wrap or freezer paper and freeze for longer storage. This is a perfect way to make Thanksgiving desserts ahead of time!

Ingredients  

  • 1 box spice cake mix
  • ½ cup canned pumpkin not pumpkin pie filing
  • 2 teaspoons pumpkin spice flavored creamer or milk
  • 1 egg
  • 1 cup semi sweet chocolate chips

Instructions 

  • Preheat oven to 350 degrees
  • Line a baking sheet with parchment paper or aluminum foil or use a silicone cookie sheet
  • In a large mixing bowl, add the egg, and beat slightly
  • Stir in the cake mix, pumpkin and coffee creamer, and mix until well combined and smooth
  • Stir in the chocolate chips
  • Drop by rounded tablespoonfuls onto an ungreased baking sheet
  • Bake for 12 minutes or until edges are firm
  • Remove from oven, allow to cool slightly, then cool completely on wire rack

Notes

You can use yellow cake mix and 1 tablespoon of pumpkin pie seasoning if you can’t find spice cake mix.
All ovens are different, and cookie can take between 10 to 15 minutes. Edges should be firm and centers soft but not too soft.
