Saturdays are always busy here, so meals are always simple. Now that we’re in the middle of football season, I wanted to catch up with my alma mater, so we enjoyed a quick meal of open-faced sloppy Joes. Normally, I would have served a salad too, but we were trying to avoid having a bunch of dishes. Hey–it’s homemade! 🙂 We love hearty flavors here, so I browned some ground chuck and added onions, garlic, salt, pepper, chili powder and cinnamon–I love cinnamon! I also used some brown sugar, ketchup and mustard.
Today, I added some yellow corn for added flavor and let it all simmer together.
I serve the meat mixture on top of toasted English muffins, and then I top each with a slice of cheese.
