This strawberry blueberry ice cream parfait is loaded with colorful fresh fruit and vanilla ice cream. It’s the perfect patriotic summer dessert!

So, it’s May, and that means summer is right around the corner — yea! Personally, I couldn’t be happier. I’m not thrilled about the inevitable triple-digit temperatures that will soon be here, but I love the freedom that comes with the season. The kids are out of school, I can sleep later than 5:30 and everyone is generally more relaxed. Even the desserts are easier and a lot lighter, like this simple parfait.

We eat a ton of fruit in the summer, but my family especially loves strawberries and blueberries . They’re just crazy about them, so I probably use these colorful fruits more than any others.

Plus, with all of the patriotic holidays coming up in the summertime, strawberries and blueberries are perfect for making red, white and blue desserts.

This is one of those easy summer desserts that really doesn’t require a recipe, but sometimes, we could all use a little extra inspiration. At least, I know I could!

This parfait is super easy to prepare, and you only need three ingredients — vanilla ice cream, strawberries and blueberries. The whipped cream on top makes four ingredients, but we’ll say that it’s optional — just in case you don’t have any. But if  you do, go ahead and indulge!

So this dessert is simple enough — it’s basically fruit and ice cream, right? But what makes it a little extra special is that you layer the fruit and ice cream, and then you serve it in a tall glass or a mason jar.

And if you want, you can even add whipped cream and more fruit. And voila — dessert is served!

Ingredients  

  • 1 pound fresh strawberries washed and sliced
  • 1 pint fresh blueberries washed
  • 8 scoops vanilla ice cream
  • whipped cream for garnish

Instructions 

  • Prepare strawberries and blueberries
  • Layer the ice cream, strawberries and blueberries in tall, chilled glasses or clean mason jars
  • Top with whipped cream and additional fruit if desired

To keep the parfaits from melting in a few seconds, I like to stick the glasses in the freezer for a few minutes before I add the ice cream and fruit. They last a lot longer this way, and you’re not serving ice cream soup for dessert!

I serve the adults and older kids the tall glasses, and the younger kids get smaller portions. But like I said, this strawberry blueberry ice cream parfait is so easy that you can pretty much make it any way that you want.
