One Pot Chicken Bacon Ranch Pasta

Chicken, penne pasta and bacon mixed with a creamy ranch sauce are cooked in one pan and ready in 30 minutes for a quick and easy dinner!

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breast cubed
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried minced onions
  • 1 teaspoon Italian seasoning
  • 2 cups mini penne pasta
  • 1 cup water
  • 1 cup ranch dressing
  • 1 cup Monterey Jack cheese
  • 4 slices cooked bacon, crumbled
  • 1 tablespoon chopped fresh parsley

Instructions

  • Add the olive oil to a large skillet, season chicken with sea salt, pepper, garlic powder, onions and Italian seasoning, and cook over medium high heat until no longer pink
  • Add pasta and water, cover, and cook over high heat until pasta is nearly al dente and water is mostly absorbed 
  • Lower heat to medium, stir in ranch dressing and cheese, and cook until pasta is done 
  • Stir in bacon and parsley, and serve

Notes

I use homemade ranch, but you can use any kind. If dressing is very thick, you may need to add some milk or water to the skillet so that the sauce will be creamy
