Open Faced Sloppy Joes

Open faced sloppy joes made with ground beef and yellow bell peppers in a tangy barbecue sauce and topped with cheddar cheese. Serve on English muffins for an easy dinner or lunch!

Ingredients

  • 1 tablespoon olive oil
  • ½ cup white onions, chopped
  • 1 ½ pounds lean ground beef
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ cup ketchup
  • ½ cup brown sugar
  • 1 teaspoon Dijon mustard
  • 1 yellow bell pepper, seeded and chopped

Instructions

  • In a large skillet, cook onions in olive oil on medium high heat until slightly soft
  • Add ground beef, and cook until no longer pink. Drain excess fat
  • Season with salt, pepper, garlic powder and smoked paprika
  • Stir in ketchup, brown sugar, mustard and bell peppers. Cover and cook on medium heat for 5 minutes or until meat mixture thickens
  • Serve over toasted English muffin halves and top with cheddar cheese slices, if desired
