Open Faced Sloppy Joes
Open faced sloppy joes made with ground beef and yellow bell peppers in a tangy barbecue sauce and topped with cheddar cheese. Serve on English muffins for an easy dinner or lunch!

1 tablespoon olive oil ½ cup white onions, chopped 1 ½ pounds lean ground beef 1 teaspoon sea salt 1 teaspoon black pepper 1 teaspoon garlic powder ½ teaspoon smoked paprika ½ cup ketchup ½ cup brown sugar 1 teaspoon Dijon mustard 1 yellow bell pepper, seeded and chopped
In a large skillet, cook onions in olive oil on medium high heat until slightly soft
Add ground beef, and cook until no longer pink. Drain excess fat
Season with salt, pepper, garlic powder and smoked paprika
Stir in ketchup, brown sugar, mustard and bell peppers. Cover and cook on medium heat for 5 minutes or until meat mixture thickens
Serve over toasted English muffin halves and top with cheddar cheese slices, if desired
