Maple Mustard Pork Roast

Ingredients

  • cup maple syrup
  • 3 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons soy sauce
  • 3 pound pork loin roast
  • 1 teaspoon dried minced onions

Instructions

  • Preheat oven to 350 ℉
  • Grease a large baking dish with olive oil or non-stick cooking spray 
  • In a medium mixing bowl, add the maple syrup, mustard, cider vinegar and soy sauce, and whisk until combined
  • Pat roast dry with paper towels. Place pork roast, fat side up, in prepared baking dish
  • Pour maple mustard sauce over pork roast
  • Sprinkle minced onions over roast, and drizzle a little sauce over onions
  • Bake for 1 hour and 15 minutes, basting with sauce once or twice during cooking process, or until internal temperature is 145 ℉ according to a meat thermometer
  • Remove from oven, cover and let rest for 5 minutes before slicing

Notes

The general rule of thumb is to cook a pork roast in the oven for 25 minutes per pound. All ovens are different so total cooking time may vary with size of the roast and the oven you are using.
Test temperature after 1 hour of cooking.
