Equipment

Ingredients

  • 1 ½ pounds lean ground beef
  • 1 onion, chopped
  • 1 bell pepper, seeded and diced
  • 2 14-oz cans kidney beans, rinsed and drained
  • 1 8-oz can tomato sauce
  • 1 14-oz can diced tomatoes
  • 1 cup water or beef broth
  • 2 teaspoons chili powder

  • ½ teaspoon ground black pepper

Instructions

  • In a large pot or Dutch oven, cook onions in olive oil until soft.
  • Add ground beef, and cook over medium high heat until no longer pink. Drain fat if needed, if not using extra lean beef.
  • Stir in the remaining ingredients, heat until bubbling, cover, and simmer on low heat for 20 to 30 minutes or until ready to eat

Notes

I usually fill the empty 8-oz can of tomato sauce with water and add that. You can add more or less, according to your preference
Chili can be transferred to a slow cooker and kept warm on low until ready to eat.
If you prefer a thicker chili, remove lid and allow to simmer until liquid reduces.
