- 1 ½ pounds lean ground beef
- 1 onion, chopped
- 1 bell pepper, seeded and diced
- 2 14-oz cans kidney beans, rinsed and drained
- 1 8-oz can tomato sauce
- 1 14-oz can diced tomatoes
- 1 cup water or beef broth
- 2 teaspoons chili powder
- 1 teaspoon sea salt plus more, to taste if needed
- ½ teaspoon ground black pepper
In a large pot or Dutch oven, cook onions in olive oil until soft.
Add ground beef, and cook over medium high heat until no longer pink. Drain fat if needed, if not using extra lean beef.
Stir in the remaining ingredients, heat until bubbling, cover, and simmer on low heat for 20 to 30 minutes or until ready to eat
I usually fill the empty 8-oz can of tomato sauce with water and add that. You can add more or less, according to your preference
Chili can be transferred to a slow cooker and kept warm on low until ready to eat.
If you prefer a thicker chili, remove lid and allow to simmer until liquid reduces.
