Southwest Egg Muffin Cups
Southwest Egg Muffin Cups are mini omelettes made in the muffin tin! They're loaded with green chiles, red peppers and cheddar cheese and topped with a zesty chipotle seasoning for extra flavor and perfect for a grab and go breakfast!

- 12 eggs
- 1 teaspoon sea salt
- 1 teaspoon dried minced onions
- ½ teaspoon black pepper
- 1 red bell pepper seeded and diced
- 1 7- ounce can diced green chiles drained
- 1 ½ cups shredded cheddar cheese
- McCormick Breakfast Toppers in Southwest Chipotle Flavor
Preheat oven to 350
In a large mixing bowl, scramble the eggs, using a wire whisk
Whisk in the salt, onions and pepper
Stir in the bell pepper, chiles and 1 cup cheese, and mix well
Pour evenly into a greased 12-cup muffin tin
Bake for 20 minutes, or until toothpick inserted in center is clean and tops are firm
Remove from oven, and top with additional shredded cheese and McCormick Breakfast Toppers
Allow to cool slightly, then remove from muffin tin and enjoy!
