Spring Cake Mix Cookies

Easy spring cake mix cookies are soft, chewy and perfect when you need a quick dessert for Easter, parties or any spring gathering!

Ingredients

  • 2 eggs
  • 1 box yellow cake mix
  • ⅓ cup coconut oil
  • 2 tablespoons milk
  • pastel m & m candies

Instructions

  • Preheat oven to 350 degrees
  • In a large mixing bowl, add eggs, and beat slightly
  • Add the cake mix, coconut oil and milk, and mix until well combined. Batter will be thick.
  • Drop batter by rounded tablespoonfuls onto cookie sheets, and top with pastel candies 
  • Bake for 10 minutes or until cookies are slightly firm around edges  
  • Remove from oven, allow to cool slightly, then transfer to wire rack or plate to cool completely
