Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • ½ cup onion chopped
  • 1 pound Yukon Gold baby potatoes washed and sliced into quarters
  • 1 rope kielbasa sliced
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon garlic powder
  • 2 bell peppers 1 red and 1 orange, chopped

Instructions

  • In a large non-stick skillet, melt butter and olive oil, and add the cut potatoes and onions
  • Cook over medium to medium high heat, stirring frequently, until potatoes begin to soften
  • Add the sliced kielbasa, sea salt, pepper and garlic powder, and cook until heated through and brown on the outside, stirring frequently
  • When potatoes are crisp on the outside and fork tender, stir in the peppers, and cook until tender but still firm

Notes

Cook times may vary depending upon how hot your skillet is but can take 30 to 40 minutes. I recommend using medium to medium-high heat and adjusting heat to avoid burning, if necessary.
