Cheesy Hashbrown Casserole

Cheesy Hashbrown Casserole is an easy side dish with Simply Potatoes or fresh hash brown potatoes and a few simple ingredients. This easy recipe is perfect for holiday dinners, family dinners and potlucks!

Ingredients

  • 20 ounces hash brown potatoes thawed, like Simply Potatoes
  • 10 ½ ounce can cream of celery soup or cream of chicken soup
  • ½ cup sour cream
  • ¼ cup melted butter
  • 2 ½ cups shredded colby jack cheese divided
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • cooked crumbled bacon optional

Instructions

  • Preheat oven to 350°
  • Grease a 2 quart casserole dish or use non stick cooking spray
  • Mix all ingredients except ½ cup of cheese and bacon together, and spread evenly in baking dish
  • Bake for 40 minutes. Top with remaining cheese and add bacon, if desired. Bake for additional 5 minutes or until cheese is melted

Notes

You need to use thawed or fresh hash browns. If using frozen, thaw in refrigerator and squeeze out any excess liquid before using.
For a crunchy topping, mix ¼ cup melted butter with crushed cornflakes or panko bread crumbs, and sprinkle over casserole before baking. 
Casserole can be made in 13 x 9-inch pan, but will be thin and will cook faster. It's easy to double the recipe for a larger pan.
