Cheesy Hashbrown Casserole is an easy side dish with Simply Potatoes or fresh hash brown potatoes and a few simple ingredients. This easy recipe is perfect for holiday dinners, family dinners and potlucks!
20ounceshash brown potatoesthawed, like Simply Potatoes
10 ½ouncecan cream of celery soupor cream of chicken soup
½cupsour cream
¼cupmelted butter
2 ½cupsshredded colby jack cheesedivided
½teaspoongarlic powder
½teaspoononion powder
¼teaspoonsea salt
¼teaspoonground black pepper
cooked crumbled baconoptional
Instructions
Preheat oven to 350°
Grease a 2 quart casserole dish or use non stick cooking spray
Mix all ingredients except ½ cup of cheese and bacon together, and spread evenly in baking dish
Bake for 40 minutes. Top with remaining cheese and add bacon, if desired. Bake for additional 5 minutes or until cheese is melted
Notes
You need to use thawed or fresh hash browns. If using frozen, thaw in refrigerator and squeeze out any excess liquid before using.For a crunchy topping, mix ¼ cup melted butter with crushed cornflakes or panko bread crumbs, and sprinkle over casserole before baking. Casserole can be made in 13 x 9-inch pan, but will be thin and will cook faster. It's easy to double the recipe for a larger pan.
