Sausage and Peppers Pasta

- 16 oz pasta
- 2 tablespoons olive oil divided
- 3 Italian sausages cooked
- ½ cup onions cooked
- 1 cup bell peppers cooked
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- salt and pepper, to taste
- fresh basil and Parmesan cheese optional
Cook pasta according to directions on box. Drain, saving 1 cup of water, and set aside
Slice sausages into ½ inch rounds
Heat a large non stick skillet on the stove, and add 1 tablespoon olive oil
Add sausage slices, peppers and onions, and cook until heated through
Stir in cooked pasta, and add remaining olive oil. Add more if needed or a little of reserved pasta water if needed
Season with Italian seasoning and salt and pepper, to taste
Garnish with grated Parmesan cheese and fresh basil, if desired. Serve immediately
To make sausage and peppers pasta from scratch, cook sausages on stove until browned on all sides. Remove, and slice when cool enough to handle. Sauté onions and peppers until soft, then add sausages back to skillet to finish cooking completely. Then, proceed with recipe as written.
Use your favorite short pasta shape. Bow ties, rotini, penne or cavatappi are good choices.
