Mayo Parmesan Chicken
Easy Mayo Parmesan Chicken without breadcrumbs is a delicious recipe using chicken with mayonnaise and Parmesan cheese. An easy weeknight meal and a family favorite that is also budget friendly!

- 4 boneless skinless chicken breasts about 2 pounds
- ½ cup mayonnaise
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- salt and pepper, to taste if desired
Preheat oven to 375 degrees f
Grease a baking dish with non stick cooking spray
In a small bowl, combine mayo, Parmesan cheese, Italian seasoning, garlic powder and onion powder until well blended
Place chicken breasts in bottom of baking dish
Spoon a dollop of the mayo mixture over each chicken breast
Spread the mixture evenly over the chicken until completely covered
Bake on middle rack in oven for 25 to 30 minutes or until internal temperature is at least 165 degrees according to a meat thermometer. Top with additional Parm or chopped parsley before serving, if desired

You can lightly pound larger pieces of chicken with a meat mallet so that they cook evenly and faster. You may need to cook chicken longer until internal temperature is 165.
Top with additional Parm over the mayo mixture before baking for a thicker crust, if desired.
Add salt and pepper to taste.
