Easy Pumpkin Spice Waffles

Servings: 12 large Belgian waffles
- 2 eggs
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 tablespoon ground cinnamon
- 1 ½ teaspoons pumpkin pie spice
- ½ teaspoon sea salt
- 2 tablespoons brown sugar
- 1 cup pumpkin puree
- 2 cups milk
In a large mixing bowl, beat the eggs until pale and slightly frothy
Add the remaining ingredients, and gently mix until well combined
Spray waffle iron with non-stick cooking spray
Cook waffles for about 5 minutes or until no steam remains (follow directions for waffle maker)
Top with butter, maple syrup, honey and chocolate chips, if desired
