- 1 ½ cups all purpose flour
- ⅓ cup brown sugar firmly packed
- 2 teaspoons ground cinnamon
- 1 tablespoon baking powder
- 1 cup milk I use 2%
- 1 egg
- ⅓ cup natural unsweetened applesauce
- 1 tablespoon coconut oil
- 1 ½ cups raisin brand cereal any brand is fine
- 1 cups apple diced with skin on ( about 2 )
- 2 tablespoons raisins optional
Preheat oven to 425 degrees
Line muffin tin with paper baking cups
In a medium bowl, mix flour, brown sugar, cinnamon and baking powder
In a small bowl, whisk the egg, coconut oil, applesauce and milk
Stir in the raisin bran until well combined, and let sit for 5 minutes
Mix in the apples
Spoon batter into muffin tin, and top with additional raisins, if using
Bake for about 20 minutes, or until toothpick inserted in center of muffin comes out clean
