Cotija Corn Avocado TRISCUIT Crackers
An easy appetizer made with grilled corn, Cotija cheese crumbles and avocado slices over TRISCUIT crackers that's perfect for summer entertaining

- 24 TRISCIUT crackers
- 2 small avocados thinly sliced
- 1 cup grilled corn
- ½ cup Cotija cheese crumbled
- ½ lime
- Salt and pepper to taste
- Cilantro for garnish optional
Slice the kernels off of an ear of grilled corn, season with salt and pepper, and set aside
Slice open avocados, scoop out onto a dish, squirt with lime juice, and slice thin
Arrange crackers on a serving dish
Add two small avocado slices to each cracker
Top each cracker with small amounts of corn and Cotija cheese
Garnish with chopped cilantro and fresh lime juice, if desired
