Skillet Lemon Chicken and Broccoli
Easy lemon chicken and broccoli cooked in one pan for super easy cleanup!

- 4 medium boneless skinless chicken breasts sliced thin
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon ground pepper
- ½ teaspoon ground ginger
- 1 to 2 large lemons
- 2 tablespoon butter
- 2 cups chopped broccoli
Heat olive oil In a medium-sized skillet, on medium heat, and add chicken
Season with half of the salt, pepper and ginger, and cook about 8 to 10 minutes on one side
Turn chicken over, and season with remaining salt, pepper and ginger
Squeeze the juice of 1/2 a lemon into the pan, and cook for about 5 minutes
Add the broccoli to the pan, and add the other half of the lemon and the butter
Cover, and cook until chicken is at least 160 degrees and broccoli is tender
Cover with additional lemon slices if desired
Serve immediately
