Spicy Chipotle Egg Salad
Egg salad flavored with chopped jalapeno peppers and chipotle powder for a little extra kick

- 10 hard boiled eggs peeled
- ¾ cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons finely chopped jalapeno pepper
- ¼ teaspoon chipotle pepper powder
- Salt to taste
Add the eggs to a medium-sized mixing bowl, and chop into large chunks
Add the remaining ingredients, and stir until creamy
Serve in sandwiches or alone
