Guacamole Deviled Eggs

Put a twist on classic deviled eggs with this delicious recipe for guacamole deviled eggs. Creamy avocado and spicy seasonings make for a flavorful and unique appetizer.

Ingredients

  • 6 hard boiled eggs cooled and sliced in half
  • 2 large avocados
  • Juice of 1 lime
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon finely chopped jalapeño pepper seeded
  • 1 tablespoon chopped cilantro
  • teaspoon smoked paprika

Instructions

  • Scoop out the avocados, add to a large bowl and add the lime juice
  • Scoop out the egg yolks, place in the mixing bowl, and set the egg whites aside
  • Mash until the mixture is fairly smooth
  • Add the salt, pepper and jalapeño pepper and mix well
  • Fill the egg whites with the avocado mixture
  • Top with smoked paprika and cilantro
  • Refrigerate until ready to serve in airtight container or covered with plastic wrap

Notes

These are best made the day you are serving. If you want to make ahead of time, cook the eggs up to 2 days in advance, and make the guacamole the day you are serving.
You can sub lemon juice for lime juice, parsley for cilantro and omit the jalapeño for less heat.
