- 4-5 large cooked sweet potatoes
- ½ cup brown sugar
- 6 tablespoons butter
- 3 tablespoons maple syrup
- 2 teaspoons ground cinnamon
- mini marshmallows about 4 to 5 cups
Preheat oven to 350 degrees f
Remove cooked sweet potatoes from jackets and place in large bowl or casserole dish
Mash sweet potatoes with a potato masher until no large chunks remain
Add brown sugar, maple syrup, butter and cinnamon, and mash well
Spread evenly in casserole dish, and smooth top with spoon
Bake for 30 minutes or until sweet potato mixture is heated through.
Add enough marshmallows to cover sweet potatoes, and bake for an additional 5-10 minutes or until marshmallows are golden brown. Or, broil for about 1-2 minutes or until marshmallows are golden brown and crispy
Use your favorite method to cook the fresh potatoes. I cook mine in the microwave.
To make sweet potato casserole ahead of time -- Follow first 3 steps, cover with plastic wrap, and refrigerate until ready to use.
To reheat -- Remove plastic wrap, and place casserole dish in oven, and cook until heated through. Top with marshmallows, and broil or bake until golden brown. You may have to add more butter or maple syrup to reach desired consistency.
You can also heat casserole in microwave.
