  • 1 pound baby potatoes washed and quartered
  • 1 tablespoon olive oil
  • 1.5 teaspoons dried rosemary
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • shredded Parmesan cheese optional


  • Add potatoes to a large mixing bowl, and drizzle with olive oil
  • Add the rosemary, sea salt, garlic and pepper, and mix well so that potatoes are evenly coated
  • Preheat air fryer to 380 degrees, and place potatoes in air fryer tray
  • Add potatoes, and cook for 20 to 25 minutes or until crispy on the outside and fork tender
  • Add grated Parmesan cheese and sprinkle fresh rosemary leaves for extra flavor if desired


Recipe was tested in the Instant Pot Vortex Plus and Omni Plus, but can be made in any air fryer. 
For best results, cook potatoes in single layer or cook in batches. If using the Vortex plus or similar model, rotate trays halfway through cooking.
