- 3 tablespoons olive oil
- 1.5 tablespoons lemon juice
- ½ teaspoon sea salt
- ¼ teaspoon ground black pepper
- 1 tablespoon Italian seasoning
- 2 English cucumbers thinly sliced
- 10 ounces grape tomatoes cut in half
Whisk the olive oil, lemon juice, sea salt and black pepper together in a small bowl. Stir in the Italian seasoning, and taste to see if you prefer more salt or pepper
Add sliced cucumbers and tomatoes to a large serving bowl, and pour dressing over. Mix well
Add chopped parsley or basil, if desired. Cover and refrigerate until ready to serve. Taste again before serving, and adjust seasoning, if necessary
You can substitute white vinegar, red wine vinegar or apple cider vinegar for the lemon juice and vegetable oil for the olive oil. Can also use your favorite Italian dressing.
If using regular cucumbers, peel and seed them first.
Salad can be made up to 1 day ahead of time. Add fresh herbs before serving if making in advance.
