- 20 ounces hash brown potatoes thawed, like Simply Potatoes
- 10 ½ ounce can cream of celery soup or cream of chicken soup
- ½ cup sour cream
- ¼ cup melted butter
- 2 ½ cups shredded colby jack cheese divided
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon sea salt
- ¼ teaspoon ground black pepper
- cooked crumbled bacon optional
Preheat oven to 350°
Grease a 2 quart casserole dish or use non stick cooking spray
Mix all ingredients except ½ cup of cheese and bacon together, and spread evenly in baking dish
Bake for 40 minutes. Top with remaining cheese and add bacon, if desired. Bake for additional 5 minutes or until cheese is melted
You need to use thawed or fresh hash browns. If using frozen, thaw in refrigerator and squeeze out any excess liquid before using.
For a crunchy topping, mix 1/4 cup melted butter with crushed cornflakes or panko bread crumbs, and sprinkle over casserole before baking.
Casserole can be made in 13 x 9-inch pan, but will be thin and will cook faster. It's easy to double the recipe for a larger pan.
