Grilled Zucchini Recipe

Grilled Zucchini with garlic, salt and pepper is an easy side dish that takes minutes to cook on the grill. This simple recipe makes a delicious summer side dish that pairs perfectly any main dish!

Ingredients

  • 3 small zucchini
  • 1 tablespoon avocado oil or olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

Instructions

  • Rinse zucchini under cold water, and pat dry
  • Cut each zucchini in half and then in quarters, lengthwise
  • Toss with avocado oil in a large bowll, and season with salt, pepper and garlic powder
  • Brush grill grates with avocado oil, and cook on medium grill (350°) for about 2 minutes per side -- spears have 3 sides, so 6 total, or until fork tender and cooked through
  • Serve immediately

Notes

Cook time may vary depending upon how thick zucchini is.
You can easily adjust the recipe to cook the amount you need.
Brush the grill grates with avocado oil or any oil with a high smoke point to avoid having the zucchini stick to the grill.
