Ingredients

  • 1 pound raw pecan halves
  • 1 large egg white
  • ¾ cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  • Preheat oven to 300 degrees
  • Line a baking sheet with foil or parchment paper
  • Add egg white to a large mixing bowl, and whisk lightly until foamy
  • Pour pecans into mixing bowl, and stir to coat with egg white
  • Gradually add the sugar and cinnamon, stirring well after each addition, until pecans are coated with cinnamon sugar mixture
  • Pour pecans onto prepared baking sheet, and spread evenly into single layer. Place in middle rack in oven
  • Bake for 10 minutes, then stir and turn over with spatula. Bake for another 10 minutes, and stir again. You can bake for an additional 7 to 10 minutes for crispier pecans, or remove after 20 minutes. Pecans should be dry and crisp, but will crisp up more as they cool

Notes

Allow to cool down completely, then transfer to airtight container.
Pecans can be kept at room temperature for 2 weeks or refrigerated for longer storage.
