Mom's recipe for Baked Pork Chops and Rice is an easy dinner recipe made with tender pork chops and creamy white rice cooked together in one baking dish. This easy recipe is a family favorite that even picky eaters love!
1 ½cupsjasmine riceor any long grain white rice, rinsed
110-ozcan cream of celery soup
110-ozcan cream of onion soupor use cream of mushroom
1cupwateror chicken broth
Instructions
Preheat oven to 350℉ and grease large baking dish with non stick spray
Season pork chops on both sides with garlic powder, onion powder, smoked paprika and pepper
Rinse rice well under cold water, and place in baking dish
Add cream soups, half of the melted butter, and water, and mix together with rice. Smooth rice evenly over bottom of baking dish
Place pork chops over rice, and drizzle remaining melted butter over pork chops
Cover with aluminum foil, and bake for 30 minutes. Then, remove foil, and bake uncovered for an additional 30 minutes or until pork chops are 145 degrees internally, according to meat thermometer, and rice is cooked
Remove from oven, and allow to rest for 5 minutes before serving

Thick bone-in chops about 1 inch thick work best. Boneless chops tend to dry out.Use lowfat, reduced sodium or healthy request versions of cream soup if desired. Use your favorite flavors -- cream of chicken or mushroom work well.Use jasmine or any long grain white rice, uncooked, but not Minute rice or pre-cooked rice.The rice will continue to absorb the liquid as it rests, but it will be very creamy.Add salt if desired, to taste
