Cake Mix Blueberry Muffins

- 3 large eggs
- 1 15.25 oz box vanilla cake mix
- ½ cup milk
- ⅓ cup melted coconut oil
- 6 oz blueberries rinsed and stems removed
- 3 teaspoons lemon juice optional
- 1 tablespoon zest optional
Lemon Glaze
- ¼ cup powdered sugar
- 1 tablespoon lemon juice
Preheat oven to 350 degrees f
Line a 12 cup muffin tin with paper baking cups
Add eggs to a large mixing bowl and beat slightly
Add cake mix, milk, melted coconut oil and lemon juice (if using). Beat with electric mixer or wire whisk until blended.
Gently stir in most of the blueberries and lemon zest
Scoop muffin batter into prepared muffin cups, and top with remaining blueberries
Bake for 15 to 18 minutes or until toothpick inserted in center of muffins comes out clean -- it's okay to have a few crumbs on toothpick
Remove from oven and allow to cool slightly. Remove from muffin tin and place on wire baking rack to cool completely. Top with lemon glaze (if using)
To prevent all blueberries from sinking, Don't add all of them to the batter. Reserve some to add to the top of the muffins right before baking.
Adding lemon juice and zest and glaze is optional, but brightens the flavor of blueberry muffins.
Recipe makes 12 large muffins. If you want smaller muffins, fill cups only 2/3 full, and use 2 muffin tins.
