One Pan Mexican Pasta Skillet

One Pan Mexican Pasta is a savory blend of pasta, ground beef, black beans, corn and tomato sauce all mixed together in one skillet.

Ingredients

  • 1 pound lean ground beef
  • 1 15 oz can black beans rinsed and drained
  • 1 jalapeno pepper chopped
  • 1 cup diced white onions
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon chipotle powder
  • 1 cup frozen corn thawed slightly
  • 1 14 ½ oz can diced tomatoes
  • 1 cup crushed tomatoes
  • 2 cups water
  • 2 cups uncooked medium pasta shells about 1/2 a box
  • 1 cup shredded Mexican-blend cheese

Instructions

  • In a large skillet, saute the jalapeno peppers and onions in olive oil over medium high heat
  • Add the ground beef, and cook until brown
  • Add the spices, corn and black beans, and stir
  • Add the diced tomatoes and crushed tomatoes
  • Add the pasta and water
  • Turn heat to high, and cover with foil
  • Cook for 10 minutes, remove foil, stir, and lower heat to medium
  • Check to make sure pasta is firm, but cooked. You can add more water and cook longer if needed
  • Stir in the cheese
  • Serve, and enjoy!

Notes

You can add chopped cilantro or parsley for garnish if desired.
