- 2 pounds boneless skinless chicken breasts
- 2 medium carrots peeled and sliced thin
- 1 small yellow onion roughly chopped
- 3 cloves garlic minced
- 1 teaspoon sea salt
- ½ teaspoon ground black pepper
- 6 cups low-sodium chicken broth
- 1 tablespoon Italian seasoning mix
- 2 cups fresh spinach torn
- 20 oz cheese tortellini fresh
Add olive oil or spray bottom of crock pot with cooking spray
Place chicken breasts in slow cooker, and add salt and pepper and Italian seasoning
Add garlic, carrots, onions, and chicken broth, and cover
Cook 2-3 hours on high or 4-6 hours on low or until chicken is cooked through and 165 degrees f internally and carrots are tender
Remove chicken to a plate, and shred with 2 forks
Place shredded chicken back in slow cooker, and add tortellini and spinach
Cook until tortellini is done, about 15-30 minutes. Serve immediately
You can add more broth or water if needed after adding the tortellini.
I recommend storing leftover soup and tortellini separately as the tortellini will continue to absorb the broth. You will need more broth when reheating the soup.
You can use rotisserie chicken or leftover chicken in the soup if desired.
Cooking time will vary with different slow cookers.
