Servings: 8 people
Cost: $15
- 2 large eggs
- 2 pounds ground beef 80/20 mix
- ¾ cup oats
- ½ cup ketchup plus a little more for the top
- 1 tablespoon Worcestershire sauce
- 1 teaspoon sea salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper
- 1 tube crescent roll dough cut into strips
- 2 mozzarella balls
- 1 green olive sliced into rounds
- 1 small red bell pepper cut into small strips
Preheat oven to 350℉
Whisk eggs in a large mixing bowl
Add the ground beef and remaining ingredients, except the dough and decorations, and gently mix with your hands until just blended
Place meat mixture in greased or foil lined baking dish, form into loaf shape about 1 1/2 to 2 inches thick, and spread a thin layer of ketchup on top
Bake in preheated oven for 50-60 minutes or until internal temperature is close to 160℉
Remove from oven, and increase oven temp to 375℉
Place strips of crescent dough on top of the loaf to form bandages, leaving room for the eyes
Return to the oven, and bake for an additional 10-15 minutes or until dough is golden brown and meatloaf is at least 160 degrees℉
Allow to rest for about 5 minutes, then decorate with the mozzarella and olive eyeballs and the pepper pieces for the mouth
Use an 80/20 blend of ground beef for best results. You can use your favorite recipe here if you want.
Be gentle when mixing the meat mixture so it won't turn out too tough.
I added a thin layer of ketchup for the top, but you don't want a heavy sauce for this loaf since the dough won' t stick.
I recommend testing the temperature at around 50 minutes of baking. If it's close to being done, you can add the dough. If it's not near 160, let it cook longer before adding the dough.
