Preheat oven to 400℉, and line a rimmed baking sheet with foil
Spread olive oil evenly over baking sheet
Pat chops dry with a paper towel, and place on prepared baking sheet
Spread mustard over pork chops
Season with brown sugar mixture
Bake pork chops uncovered for 15-20 minutes or until internal temperature is 145℉ according to instant-read thermometer
Remove from oven, cover and let rest for 5 minutes before serving
