Baked Salmon with Lemon Butter and Garlic

- 4 salmon fillets about 1.5 to 2 pounds total
- 1 tablespoon olive oil
- 3 tablespoons butter
- ¼ cup lemon juice
- 1 teaspoon sea salt
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley flakes
- ½ teaspoon ground black pepper
- fresh parsley and lemon slices optional
Preheat oven to 400℉, and add olive oil to the bottom of a baking dish
Pat salmon dry with a paper towel, and allow to sit at room temperature while you prepare the sauce
Melt the butter, and stir in the seasonings and lemon juice
Place salmon in the baking dish, and pour the sauce over the salmon. You can brush some sauce on top of the fillets to ensure they are coated with sauce
Bake for 15-20 minutes or until flesh in opaque and flakes easily with a fork. The USDA recommends cooking to 145℉. Or cook to desired doneness.
Allow to rest for 5 minutes, then garnish with fresh parsley and lemon slices, if desired, and spoon sauce over salmon when serving
You can use a sheet pan, but the baking dish or casserole dish will hold the sauce better, allowing you to spoon it over the fish when serving and keeping the fish nice and moist.
Broil for a couple of minutes after baking salmon if you want a crispier texture on top.
I usually, cook to 135-140 to allow for carryover cooking while the salmon rests. Use an instant thermometer for best results.
You can use fresh minced garlic and fresh herbs for cooking if you have them. Italian seasoning or Herbes de Provence or even lemon pepper seasoning are other good options.
