- 2 large eggs
- 3 medium ripe bananas about 1½ cups
- ⅓ cup vegetable oil
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1⅓ cups all purpose flour
- ¾ cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon sea salt
- 1 teaspoon ground cinnamon
- ⅓ cup cocoa powder Dutch process or regular
- 1½ cups semi sweet chocolate chips divided
- ¼ cup mini chocolate chips
Preheat oven to 350℉, and grease a 10x5 loaf pan with butter or nonstick cooking spray
Beat eggs in a large mixing bowl
Add in bananas, and mash with a fork until most lumps are gone
Mix in the vegetable oil, milk and vanilla extract until just combined
Add in the flour, sugar, baking powder, salt and ground cinnamon
Sift in the cocoa powder, and gently whisk in dry ingredients until just combined. Do not over mix
Fold in 1¼ cups chocolate chips
Pour batter in prepared loaf pan, and top with remaining chocolate chips and mini chocolate chips
Bake for 60-70 minutes, or until toothpick inserted comes out mostly clean, or internal temperature is 200℉
Remove from oven, allow to cool slightly, and remove from loaf pan to finish cooling on a wire rack or platter
Do not over mix batter. Finish whisking once ingredients are just combined.
I do not recommend subbing butter for oil in this recipe. The oil will make a moister loaf.
Sift cocoa powder to break up any clumps.
Store in an airtight container at room temperature for up to 4 days. Place a paper towel under the loaf to absorb any excess moisture.
