Crockpot Meatloaf
This easy crockpot meatloaf recipe is perfect for a simple weeknight meal. Just mix, shape and let your slow cooker do the work. Turns out tender and juicy every time!

- 2 large eggs
- 2 pounds ground beef
- ¾ cup oats
- ½ cup ketchup
- 2 tablespoons dried minced onions
- 1 tablespoon Worcestershire sauce
- 1 teaspoon sea salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper
Glaze
- 2 tablespoons ketchup
- 2 teaspoons brown sugar
Whisk eggs in a large mixing bowl
Add the ground beef and remaining ingredients, and gently mix with your hands until just blended
Place the meat mixture onto a large piece of aluminum foil, and form into a loaf
Add the glaze ingredients to a small bowl, and mix together until blended
Spread glaze on top of the meatloaf, and place meatloaf in the bottom of the slow cooker
Cover with lid, and cook for 3 hours on low or 6 hours on high or until internal temperature is at least 160℉, according to an instant read thermometer
Lift meatloaf out of slow cooker, place on serving platter, and allow to rest for 5 minutes before slicing
Use an 80/20 blend of ground beef for best results. Going too lean results in a dry loaf.
Be gentle when mixing the meat mixture so it won't turn out too tough.
Dry spices make this recipe super easy, but you can use an onion and garlic cloves if you want.
Total cooking times will vary with different slow cookers. Mine cooks fast and the meatloaf was done a little before 3 hours on high.
