For the Cake
- 1 large egg
- ½ cup pumpkin puree
- ½ cup applesauce unsweetened
- ¼ cup coconut oil melted
- ¼ cup peanut butter
- 1 cup flour
- ½ teaspoon baking soda
- 1 medium carrot grated
For the Whipped Peanut Butter Frosting
- 1 cup heavy whipping cream
- ½ cup peanut butter
For the Cake
Preheat oven to 350℉, and prepare an 8 inch cake pan with butter and a parchment paper round
Beat the egg in a large mixing bowl
Add in pumpkin puree, applesauce, melted coconut oil and peanut butter, and mix until fully combined
Stir in flour and baking soda
Gently fold in grated carrot until evenly combined
Evenly spread mixture into prepared cake pan
Bake for 22 minutes or until a toothpick comes out clean
Remove from oven and allow to cool completely before frosting
For the Frosting
In a medium mixing bowl, beat the whipping cream until sift peaks form
Mix in the peanut butter until fully combined
Using an offset spatula, evenly spread the frosting over the cooled cake. Use any leftover frosting for fun decorations such as piping shells or any writing
Refrigerate until ready to serve, and store in the refrigerator
Be sure to NOT use peanut butter with xylitol or other artificial sweeteners.
Use pure pumpkin, not pie filling. You can also use your own homemade pumpkin puree.
Make sure to evenly spread the batter into the cake pan, and make the top as smooth as possible. The batter will not spread while baking, so it's important to have an even top prior to placing in the oven.
