- 2 cups water
- 2 cups broccoli florets trimmed
- 2 cups instant rice
- 2 cups cooked chicken bite size pieces
- 1 teaspoon sea salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon ground black pepper
- 2 teaspoons dried parsley flakes
- 1 15-oz can cream of chicken soup
- 1 cup milk
- 1 cup shredded Monterey Jack cheese
- 2 cups shredded cheddar cheese
Preheat oven to 350℉ and grease a 9x11 casserole dish
In a large skillet or small Dutch oven, bring water to boil
Add the broccoli, and cook for 1 minute
Stir in rice, then remove from heat
Stir in remaining ingredients, except for cheddar cheese, until well blended
Spoon rice mixture into prepared baking dish, and top with remaining cheese
Bake for 15-20 minutes or until bubbly and cheese is melted
You can sub frozen broccoli or frozen mixed veggies.
Use your favorite cheese. American cheese slices will make the rice even creamier.
For a crunchy topping, mix a sleeve of buttery crackers with 4 tbsps melted butter, and sprinkle on top of casserole before baking.
