- 1 tablespoon olive oil
- 1 small yellow onion diced
- 1 ½ pounds lean ground beef
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon herbes de Provence seasoning
- 1 teaspoon sea salt
- 1 teaspoon garlic powder
- ½ teaspoon ground black pepper
- 2 small celery ribs chopped
- 4 medium carrots peeled and sliced
- 1 pound small baby potatoes quartered
- 2 tablespoons all purpose flour
- 4 cups beef broth
- 1 cup frozen peas
In a large pot or Dutch Oven, sauté the onion in olive oil over medium heat until soft
Add ground beef, and cook until no longer pink, breaking into large pieces as you go
Add the tomato paste, Worcestershire, herbes de Provence, salt, garlic powder, pepper, celery, carrots, potatoes and flour, and stir until well blended
Stir in the beef broth, then cover, and heat until boiling
Reduce heat, remove lid, and simmer over medium low heat for 20 minutes or until vegetables are tender and broth has thickened
Stir in the peas in the last 5-10 minutes before serving
Cut the veggies into small slices about the same size so they cook evenly.
You can sub Italian seasoning or dried parsley for the herbs from Provence.
For a thicker stew, add 3 cups of broth.
