- 1 cup semi-sweet chocolate chips
- 1 cup peanut butter
- 4 tablespoons butter
- 7 oz marshmallow fluff
- 1 teaspoon vanilla extract
- 10 cups Rice Chex cereal
- 3 cups powdered sugar
- 1 cup mini marshmallows
In a large mixing bowl, melt the semi sweet chocolate chips, peanut butter and butter together in the microwave in 30 second intervals, stirring after each interval
Add in the marshmallow fluff and vanilla extract, and stir until fully combined
Add in Rice Chex cereal and mix with a rubber spatula until cereal is evenly coated in the chocolate mixture
Place half of the powdered sugar in a large ziplock freezer bag. Add the cereal mixture, remaining powdered sugar and marshmallows. Seal bag and shake until the cereal is evenly covered in powdered sugar
Transfer the mixture into a serving bowl
Can use smooth or creamy peanut butter for this recipe.
Always melt chocolate in short intervals, and stir after each microwave interval to avoid the chocolate seizing.
Use a soft rubber spatula and gently mix the Rice Chex cereal into the melted chocolate mixture to avoid crumbling or breaking the cereal.
Instead of adding all the powdered sugar at once, add in half of the powdered sugar to the bottom of the ziplock baggie before adding in the chocolate covered cereal mixture and remaining sugar for easier distribution.
Store in an airtight container at room temperature for up to 1 week.
