Mom's Tuna Patties
Mom's easy tuna patties recipe makes tuna cakes that are tender on the inside and crispy on the outside. A delicious dinner in 30 minutes and super budget friendly!

- 15 oz canned tuna 2-3 cans drained and flaked
- 2 large eggs
- ½ cup cracker crumbs
- 1 teaspoon lemon juice
- 1 teaspoon dried parsley flakes
- ½ teaspoon sea salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon ground black pepper
- 2 tablespoons olive oil or more, as needed
In a mixing bowl, whisk the eggs with a fork
Mix in the tuna, cracker crumbs, lemon juice and spices until well combined
scoop mixture into 5 balls, about ½ cup each, then use your hands to gently press and form into patties, about 1 inch thick
Heat the olive oil in a large skillet over medium heat
Add patties to skillet, and cook for 4 minutes or until golden brown on 1 side, then gently flip and cook until golden brown and heated through, about 4-5 minutes
I like to chill the patties for 15-30 minutes before frying to help prevent them from falling apart, but it's not necessary. You can also make them earlier in the day and refrigerate until ready to eat.
Cook on medium heat to prevent the cakes from getting too brown. You can add more oil if needed.
Be gentle when flipping the patties. You can use 2 spatulas or a fork to make this easier if needed.
