Monster Cookies

This easy Monster Cookies recipe makes soft chewy cookies loaded with peanut butter, oats, chocolate chips and mini candies. Seriously the best, and sure to satisfy any cookie craving!

Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon sea salt
  • ½ teaspoon ground cinnamon
  • 1 cup butter softened
  • ½ cup creamy peanut butter
  • 1 cup firmly packed brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ¼ cups rolled oats
  • 1 ¼ cups semi sweet chocolate chips plus extra for the top
  • 1 cup mini m&ms plus extra for the top

Instructions

  • In a medium mixing bowl, combine the flour, baking soda, sea salt and cinnamon. Mix well and set aside
  • In a large mixing bowl, beat 1 cup butter until creamy
  • Add peanut butter and beat until fully combined
  • Add brown sugar, granulated sugar and vanilla extract, and beat until creamy
  • Add eggs, and beat well. Gradually mix in the flour mixture and mix well
  • Stir in the oats, chocolate chips and mini m&ms, and mix until well combined
  • Using a cookie scoop (about 2 tablespoons full) scoop the cookie dough into balls. Set the dough balls on a prepared baking sheet and chill in the fridge for at least 15 minutes
  • In the meantime, preheat oven to 350 degrees
  • Set the chilled cookie dough balls on a prepared baking sheet, making sure they're at least 2 inches apart from each other
  • Top the cookie dough balls with extra chocolate chips and mini m&ms
  • Bake for 12 to 14 minutes, or until edges are lightly browned and semi firm
  • Remove from oven, allow to cool slightly, then transfer to wire rack or cool surface to cool completely

Notes

Don't over bake cookies. Edges should be firm and golden brown. The middles may be a little soft, but they will harden as the cookies cool.
Swirl a large drinking glass or cookie cutter around the freshly baked cookies to make them perfectly round.
To keep cookies soft, store in airtight container with a piece of sandwich bread.
