In a medium mixing bowl, combine the flour, baking soda, sea salt and cinnamon. Mix well and set aside
In a large mixing bowl, beat 1 cup butter until creamy
Add peanut butter and beat until fully combined
Add brown sugar, granulated sugar and vanilla extract, and beat until creamy
Add eggs, and beat well. Gradually mix in the flour mixture and mix well
Stir in the oats, chocolate chips and mini m&ms, and mix until well combined
Using a cookie scoop (about 2 tablespoons full) scoop the cookie dough into balls. Set the dough balls on a prepared baking sheet and chill in the fridge for at least 15 minutes
In the meantime, preheat oven to 350 degrees
Set the chilled cookie dough balls on a prepared baking sheet, making sure they're at least 2 inches apart from each other
Top the cookie dough balls with extra chocolate chips and mini m&ms
Bake for 12 to 14 minutes, or until edges are lightly browned and semi firm
Remove from oven, allow to cool slightly, then transfer to wire rack or cool surface to cool completely
